Assignment Brief
The purpose of this assignment is to enable you to gain understanding of the nature and diversity of hospitality and its constituent industries, including the range of job roles and employment possibilities.
Scenario 1
You have been appointed as the manager of Verve People recruitment agency, a leading UK based organisation finding jobs for people in the hospitality industry. As your job role requires an extensive knowledge of the hospitality industry in the UK, the director has requested you prepare a report that gives a holistic view of the different types of hospitality organisations available for potential employees. The suggested contents of your report are outlined in the following tasks.
Task 1 LO1 1.1 Analyse the current scale, scope and diversity of the hospitality industry
To achieve 1.1, you will write a report that establishes a framework for the industry.
This should include an analysis of different types of industries and organisations. (For example: hotels; restaurants; pubs, bars and nightclubs; contract food service providers; hospitality services; membership clubs and events). The report should include the scale, scope and diversity of hospitality. This should be a thorough examination to explain the industry in detail in terms of size, different types of organisations and their differences.
The report should consider examples of local, national and international organisations. Use organisation names and brands to show your familiarity with the industries they are associated with.
Task 2 LO1 1.2 Discuss the organisational structure of different hospitality organisations
To achieve 1.2, the report will include a discussion of different forms of business ownership and structure.
The report may include how businesses are owned (e.g. private, limited, sole-trader, franchised). Discuss at least three different diagrams (i.e. tall, flat or hierarchal) to show understanding of organisational structures across the hospitality industry. You could include information to show operational areas, functional areas and others behind the scenes. You may wish to add what they show in terms of hierarchy, accountability or delegation.
Task 3 LO1 1.3 Assess the role of hospitality related organisations and professional bodies
To achieve 1.3, the report must include at least four hospitality-related organisations and professional bodies using the Standard Industrial Classification of the industries that encompass hospitality. The report should assess the role of these organisations and professional bodies. The report should assess what they do, their purpose as well as the quality of provision.
Consider the following:
Hospitality industry: hotels, restaurants; pubs, bars and nightclubs; contract food service providers; hospitality services; membership clubs and events; brands and businesses
Scale and scope: size; types of ownership; turnover; percentage of Gross Domestic (GDP); purchasing power
Diversity: products and services e.g. food, drink, accommodation, conference and banqueting, leisure facilities; levels of service; customer base
Organisational structure: operational areas e.g. food preparation, food and beverage services, accommodation services, front of house services; functional e.g. human resources, finance, marketing, research and development, security, maintenance
Hospitality-relate organisations and professional bodies: as current at time of delivery, to include People 1st, British Hospitality Association, Institute of Hospitality, British Institute of Innkeepers, Springboard UK
Scenario 2
Verve People recruitment agency, prides itself on recruiting the right people for the right job. Employment have approached you and asked that you explain their recruitment policy to potential employees. This should be done in the form of a presentation for prospective employees. The suggested contents of your presentation are outlined in the following tasks.
Task 4 LO2 2.1 Assess the staffing requirements of different hospitality industries
To achieve 2.1, you will prepare a presentation to assess the staffing requirements in the hospitality industry.
This must include the different types of staff and the type of establishment. You may wish to consider, the numbers employed and the contributing factors such as, the level of service. It is recommended that you use at least two different industries such as hotels; restaurants; pubs, bars and nightclubs; contract food service providers; hospitality services; membership clubs and events. However, your presentation could be general in terms of staffing requirements.
Task 5 LO2 2.2 Discuss the roles, responsibilities and qualification requirements for hospitality staff
To achieve 2.2, you need to produce two person specifications
These should be for different industries and include; job role, responsibilities, career progression/employment opportunities as well as the required qualifications/experience that is necessary for the post-holder. It is important that you do not use ones that have been produced.
Note – you may wish to consider the job you used for PPD LO2
Consider the following:
Staff types: functional specialists; operational; craft; skilled/semi-skilled/unskilled; supervisory; management; apprentices; management trainees; full time/part time; casual; agency; foreign workers; volunteers
Hospitality industry: hotels; restaurants; pubs, bars and nightclubs; contract food service providers; hospitality services; membership clubs and events
Scenario 3
The hospitality industry is exciting and dynamic. Verve People appreciate how the industry is constantly changing and have decided to write an article on some of the issues resulting from recent developments. This should be done in the form of an article that can be used for the website or newspaper publication. The suggested content of your article is outlined in the following tasks.
Task 6 LO3 3.1 analyse operational, managerial and legislative issues resulting from recent developments affecting the hospitality industry
To achieve 3.1, type an article that analyses recent developments in the hospitality industry and what issues have emerged. You will need to research contemporary issues and evaluate breaking news and expected developments.
You should include eat least two issues from each category:
• Operational
• Managerial
• Legislation
Task 7 LO3 3.2 Discuss the current image of the hospitality industry
To achieve 3.2, the article must discuss the image on the industry following your extensive research. This could have an angle on popular perception of culture and customer focus. It may include relevant evidence from guides or reviews. It could have up-to-date information from the media or industry celebrities.
Consider the following:
Operational: developments e.g. standards operating procedures, food safety, service requirements/needs, levels of productivity, employee expectations, recruitment and retention, learning and development, flexible working,
