Cooking/Restaurant Project – 100 points

Your assignment is to prepare a holiday dish for guests or yourself that might be served in one of the countries (other than the United States) discussed this semester. You may also visit an ethnic restaurant and order as if it is a special holiday.

Please submit this assignment in the exact format below. Answer each question under each heading and sub-heading and submit this file when completed. See tips for success on the next page!!!
Instructions:

1. Choose a country of interest
a. Write 1 paragraph introducing the country 10pts
2. Choose a holiday that is celebrated in that country
a. Write 2 paragraphs describing the holiday 10 pts
3. Prepare a holiday dish of traditional foods that might be served on this holiday occasion
a. Provide all recipes used. A recipe will list all ingredients and amounts. It will also have a set of instructions. It’s important that you submit the recipe in the correct format. If you choose to visit a restaurant, provide similar recipes for what you have ordered (You do not need to ask for the recipes from the restaurant. They may not be willing to provide them. Submit recipes that best represent what you ate). 5 pts
b. In your own words, write at least 1 paragraph describing the recipes and foods chosen. Describe the tastes, textures and flavors. This can also be an opportunity to share personal or family connections you have with this food. If you submit a description from a recipe, you will receive no credit for this section. 10 pts
c. Provide a photo of the meal you have made OR provide a photo of the restaurant name and the meal you are served. If it appears you have taken a photo from online, you will receive zero points for this section and possibly an additional point deduction for photo plagiarism. 5 points
4. Write 3-5 paragraphs explaining the following:
a. What nutrients are provided in these dishes and what nutrients might be lacking? What are the nutritional benefits of this dish? Expand beyond macro/micronutrients to describing the phytochemicals that might also be present. Be sure you are thorough and display your nutritional knowledge. If this is your first nutrition class, be sure to do extra review to ensure the information you provide is accurate. (HINT: Before assuming something has no nutritional value – check first! Every food provides us with some sort of nutritional value) 15 pts
b. Did you need to make substitutions for certain ingredients? Explain why or why not. 5pts
c. What are the appropriate manners for serving a guest on this occasion? 10 pts
d. Describe any blessings that might be used over the meal 10 pts
e. Describe any “fun” food facts, food-related folk tales or food beliefs that are typical of the region or related to the food you chose 10 pts
5. Write 1 paragraph on your personal experience and thoughts on this activity. What did you find interesting? Valuable? Challenging? 5 pts
6. Please provide this assignment in a word document and use the formatting above to structure the assignment (i.e. 1a., 2a, 3a, 3b, etc…). Use a basic, clear font, 12pt, 1-inch margins. Assignment must be submitted as a word document. Use correct grammar, punctuation and spelling. 1. If you choose a celebration you are familiar with, be sure to formally research the holiday and traditions and cite appropriate sources. It’s ok (and encouraged) to include personal experiences, but it’s crucial to also provide accurate information from reliable sources. Your personal experience might not always accurately reflect general cultural traditions.

2. At the college level, I expect you to expand on your thoughts and display your knowledge. Submitting 1-2 sentence answers will result in a loss of points. Be sure to fully answer all required questions and provide examples when needed (i.e. “There are many nutrients in this dish. It’s very balanced” = too general! A statement like this must be followed up with facts regarding the nutritional value of the dish). Since this is a college level nutrition course, it’s especially important to expand on this topic and really evaluate the nutritional qualities of the dish you choose. Simply listing the amount of macro and micronutrients present will result in a loss of points.

3. Do not cite Wikipedia as a source. This is not an appropriate source at the college level. Try your best to find reliable sources online. Of course, use the book as a primary resource.

4. The point value of this assignment is equal to the point value of an exam. Be sure to take it seriously if you want full credit!
